Traditional Shepherd's Pie

Looking for a simple, but hearty dish that's sure to please the whole family? Try this take on traditional Irish Shepherd's Pie made with Green Fire Farm ground lamb.

Ingredients
- (2 lbs) potatoes
- (1/2 cup) whole milk or half/half
- (1/4 cup) butter
- (1 cup) carrots, diced
- (1 cup) onion, diced
- (2 tbsp) olive oil
- (2 cloves) garlic, chopped
- (1 lb) Ground Lamb
- (2 tbsp) all purpose flour
- (1 cup) beef broth
- (1 tsp) Worcestershire sauce
- (2 tbsp) tomato paste
- (2 tsp) rosemary
- (1 tsp) thyme
- (1 tsp) salt
- (1/2 tsp) pepper
- (1/2 cup) peas (frozen or fresh)
- (1) egg yolk
- (1/2 cup) Parmesan cheese
Directions
- Prepare mashed potatoes. Wash (and peel if you prefer - we keep ours on) and quarter.
- Place quartered potatoes into a kettle with water and set on stovetop over medium-high heat.
- Cook until potatoes are softened. Use a fork to test this - it should easily push into the potatoes when done.
- When potatoes are soft, drain water from the kettle.
- Add in milk and butter to the potatoes. Mash with an electric mixer or hand masher.
- Add more milk or butter if needed to obtain a sturdy, but creamy consistency.
- Season with salt, pepper, and garlic powder to taste.
- Set potatoes aside.
- Heat the olive oil in a medium-large skillet over moderate heat before adding the carrots and carrots. Saute until softened. Add in garlic.
- Add ground lamb to the skillet. Cook until red has faded. Stir in flour to coat lamb.
- Add to skillet, beef broth, tomato paste, and Worcestershire sauce. Continue to cook over medium heat.
- Add in thyme, rosemary, salt and pepper to taste.
- Cook until sauce is thickened and reduced. Add in peas and cook another 3 minutes or so.
- Transfer lamb and sauce from skillet into a casserole dish. Top with mashed potatoes.
- Beat the egg yolk into an egg wash and brush the top of the potatoes with it.
- Top potatoes with cheese as desired.
- Bake at 400 degrees F for 20 minutes or until top is browned.
- Remove from oven and let cool 5-10 minutes before serving.
Serve with a crusty artisan bread to help soak up some of the sauce. Accompany with a side of greens for a well rounded meal.
